Today, I celebrate five months since embracing a Keto/Carnivore way of eating, but mostly a carnivore approach. If anything, I have become stricter and more disciplined. I eat twice a day; some days, at times, I eat only once daily. The only non-carnivore thing I consumed was my coffee; I added cinnamon. I stop putting sweeteners in my coffee and add butter and heavy whipping cream. I also eat sunflower seeds. Outside of these, I only eat carnivore way of eating.
As stated before, I stopped taking all my meds in February. I decided to address my metabolic health strictly by changing my diet and trusting this new way of eating. I love experiencing satiation daily; I am not always hungry like I used to… I love that!
With the stress in my former job and the fact that I started hating going to work there. I gave them a two-hour notice, and I was out of there. I have been focusing on our new business and exited that on June 5, I start my new job working with folks in a drug and alcohol rehabilitation program. I will make more money than I have in my career and do what I love. However, my glucose numbers have been in the 200s consistently in the last several weeks. They do improve throughout the day, but they are still above normal. I also gained every pound I lost at the beginning of the year. I am back to my consistent weight in the last several years, around 230 pounds. So, what is going on? I don’t know.
This week I am doing blood work my wife ordered for me; I hope to get some answers. All I can think of is that I damaged my body over decades, and now it will take time to return to normal. However, I also believe that there is something else wrong with me. The blood work results will help to find out. Am I losing my faith in yet, another diet? Did carnivore and Keto prove to be, like all the diets, good in the first few months but then alarming or unsustainable as time goes by? Am I still suffering from the effects of stress?
The alternative is not going back to the American o Puertorican diet; that would be giving up. I know enough that processed food, overloading on carbs and sugar, is horrible for the body, especially for those who struggle with diabetes, so why go back there? But I do want answers; I need answers! I feel frustrated now; who can tell me why my glucose is high when I am not eating carbs or sugars? Nobody seems to have the answer to this question. I trust the Holy Ghost will guide me into all truth, including solutions for my current condition. The story is not complete; it is to be continued!
